Lamb Roast

Have a big family or love to meal prep? Cook up a delicious roast and use the leftover in tortillas, sandwiches, casseroles or stews.
  • 1 lamb roast (4-5lbs)
  • 4 cloves garlic
  • 1 tbsp olive oil
  • 1 tbsp rosemary
  • 1 tbsp parsley
  • 1 tbsp dijon mustard
  • 1 tbsp salt
  • 2 tsp pepper

Make scores into the top of your roast.

Mix the last 7 ingredients together and spread onto the fatty side of the lamb and place facing up.

Place in oven for 2.5-3 hrs. it is done when the inside temperature is at 150F

Let rest before slicing.
