Lamb Liver Pate

Ingredients

·       1lb Liver cut into 2cm cubes

·       2 strips bacon cut into small pieces

·       ¼ cup butter

·       1 small onion, finely chopped

·       1 clove garlic, crushed

·       1 tsp tomato paste

·       2 tsp gin

·       ¼ cup whipping cream

 

1.       Melt the butter, fry bacon for 2-3 min

2.       Add onion and garlic and fry for 3-4 min

3.       Add liver and cook for 4-5min

4.       Add tomato paste and brandy and cook for at least 2min or until liver is just cooked. Overcooking will lead to a dryness

5.       Take off the stove and allow it to cool

6.       Add the whipping cream and combine in a blender until smooth

7.       Add seasoning and let chill before serving
